  凍頂茶,被譽為台灣茶中之聖。產於台灣省南投鹿谷鄉。它的鮮葉,採自青心烏龍品種的茶樹上,故又名「凍頂烏龍茶」。凍頂為山名,烏龍為品種名。但按其發酵程度,屬於輕度半發酵茶,製法則與包種茶相似,應歸屬於包種茶類。文山包種和凍頂烏龍,係為姊妹茶。凍頂茶品質優異,在台灣茶市場上居於領先地位。其上選品外觀色澤呈墨綠鮮豔,並帶有青蛙皮般的灰白點,條索緊結彎曲,乾茶具有強烈的芳香;沖泡後,湯色略呈柳橙黃色,有明顯清香,近似桂花香,湯味醇厚甘潤,喉韻回甘強。葉底邊緣有紅邊,葉中部呈淡綠色。 

凍頂茶歷史悠久,聞名中外,目前栽培面積達2000公頃。據傳南投縣鹿谷鄉人林鳳池先生,於清朝咸豐5年(1855年),赴福建省應考「舉人」及格返鄉,從武夷山帶回36株青心烏龍茶苗,其中一部份(據說12株)種植於鹿谷鄉麒麟潭邊的山麓上,是為「凍頂茶」的開端。經過一百多年的發展,尤其最近十幾年來,在政府有關單位大力輔導及當地農民的密切配合下,「凍頂茶」已發展成為家喻戶曉、馳名中外的台灣特產。凍頂茶屬於青茶類,在製茶過程中,「熱團揉」是製造凍頂茶獨特的「中國功夫」技藝,非親臨現場,實難以筆墨形容,是以好的凍頂茶,其茶葉形狀條索緊結整齊,葉尖捲曲呈蝦球狀,茶湯水色呈金黃且澄清明澈,香氣清香撲鼻,茶湯入口生津富活性,落喉韻味強且經久耐泡為凍頂茶特色。

地理位置
鹿谷鄉位於南投縣西南部,東面以白不仔溪與信義鄉為鄰,西邊與南邊以大鞍嶺和竹山鎮相接,北面隔濁水溪與集集相對,面積141.89 平方公里,全境多山,有清水溝溪、北勢溪貫穿其中,東西向長26.7公里,南北長20.1公里。

氣候

地形地勢
鹿谷鄉係屬於西部衝上斷層山地之阿里山脈地形與山麓丘陵及切割台地之斗六陵區的銜接切合地帶,因此,地形變化相當大,有山地、切割台地、河階段丘、丘陵地及河川沖積地等多種地形,境內北東南三面環山,地勢自初鄉村由低往高向東形成斜坡,境內群山海拔在300~2,200公尺之間,標高最高為鳳凰稜脈有五叉倫山(標高2,194公尺),最低為藤湖山(標高296公尺);較負盛名的山嶺有鳳凰山(標高1,697公尺)、白石牙山(標高1,171公尺)。麒麟山(標高743公尺)、凍頂山(標高740公尺);屬於較平坦的地區為沖積地,自秀峰向北至瑞田一帶,及小面積的清水溝溪沖積地,位於鹿谷鄉的北端。

土壤
鹿谷鄉的土壤可大致區分為沖積土、紅壤、黃壤及崩積土四類。沖積土分佈於小半天、內湖及濁水溪南岸之瑞田一帶,地勢較平坦,土質肥沃,為瑞田良質米的精華農業區;紅壤則分佈於大水堀台地及北勢溪兩岸河階台地,土層深淺不一,排水良好,為茶園重要地帶;黃土分佈在坪頂大丘園一帶及鳳凰村之頂城,土壤不深厚,結構亦不穩定;至於崩積土則分佈於山地及丘陵地等地區,表土容易遭受雨水沖積,土壤結構較不穩定。

水文
鹿谷鄉周邊及境內主要溪流包括北端濁水溪與集集鎮為鄰,境內則以東埔納溪與清水溝溪為主,前者由鹿谷鄉之東南端流向西偏北,在崎腳出境,支流則包括北勢溪、中湖溪、財仔溪;後者源自東邊之苦嶺腳,向西北流至秀峰,轉向北側經瑞田,於瑞田注入濁水溪,支流包括新和溪、水尾溪、秀峰溪等,境內溪流長度合計約60公里,境內有二處較著名的水潭,其一為麒麟潭位於尖子頂山南邊,其二為大學池位於溪頭森林遊樂區。
